INGREDIENTS:
Cooked basmati rice 5 cups
Mixed cut vegetables frozen 2 cups
Eggs 3
Soy sauce 3table spoon
Cooking oil 4 Table spoons
Garlic finely chopped 3cloves
Ginger finely chopped 1 Table spoon
Black pepper 1Teaspoon
Salt as needed
Directions:
- Heat 2 Tsp oil in a medium sized pan over a medium heat
- Add the vegetables and cook for 5 minutes, until softened slightly
- Add ginger and garlic and cook another 2- 3 minutes
- Remove the vegetables from the pan and place in a bowl
- Heat 2 table spoon oil in a large pan over a medium heat
- Add the eggs in to the pan and stir well until scrambled
- Transfer the egg in to a bowl and keep aside
- Add the rice in to the same pan, and cook for 1 minute
- Add in the soy sauce and stir to coat the sauce on the rice
- Add the vegetables and egg back in to the pan and stir well to combine, cook for 4-5 minutes
- Sprinkle pepper over the rice
- Transfer in to a bowl
SERVE WARM AND ENJOY
