Easy Egg and Vegetable Fried Rice


INGREDIENTS:

Cooked basmati rice   5 cups
Mixed cut vegetables frozen 2 cups
Eggs 3
Soy sauce 3table spoon
Cooking oil 4 Table spoons
Garlic finely chopped 3cloves
Ginger finely chopped 1 Table spoon
Black pepper 1Teaspoon
Salt as needed


Directions:

  1. Heat 2 Tsp oil in a medium sized pan over a medium heat
  2. Add the vegetables and cook for 5 minutes, until softened slightly
  3. Add ginger and garlic and cook another 2- 3 minutes
  4. Remove the vegetables from the pan and place in a bowl
  5. Heat 2 table spoon oil in a large pan over a medium heat 
  6. Add the eggs in to the pan and stir well until scrambled
  7. Transfer the egg in to a bowl and keep aside
  8. Add the rice in to the same pan, and cook for 1 minute
  9. Add in the soy sauce and stir to coat the sauce on the rice
  10. Add the vegetables and egg back in to the pan  and stir well to combine, cook for 4-5 minutes
  11. Sprinkle pepper over the rice
  12. Transfer in to a bowl

SERVE WARM AND ENJOY
