Easy Egg and Vegetable Fried Rice


INGREDIENTS:

Cooked basmati rice   5 cups
Mixed cut vegetables frozen 2 cups
Eggs 3
Soy sauce 3table spoon
Cooking oil 4 Table spoons
Garlic finely chopped 3cloves
Ginger finely chopped 1 Table spoon
Black pepper 1Teaspoon
Salt as needed


Directions:

  1. Heat 2 Tsp oil in a medium sized pan over a medium heat
  2. Add the vegetables and cook for 5 minutes, until softened slightly
  3. Add ginger and garlic and cook another 2- 3 minutes
  4. Remove the vegetables from the pan and place in a bowl
  5. Heat 2 table spoon oil in a large pan over a medium heat 
  6. Add the eggs in to the pan and stir well until scrambled
  7. Transfer the egg in to a bowl and keep aside
  8. Add the rice in to the same pan, and cook for 1 minute
  9. Add in the soy sauce and stir to coat the sauce on the rice
  10. Add the vegetables and egg back in to the pan  and stir well to combine, cook for 4-5 minutes
  11. Sprinkle pepper over the rice
  12. Transfer in to a bowl

SERVE WARM AND ENJOY

Baby potatoes with Seasonings


:


Ingredients:
Baby potatoes white 150 gm Scrubbed
Baby potatoes Red 150gm Scrubbed
Butter 1 Tble spoon
Dried minced garlic 1 tea spoon
Dried Parsley  1/2 teaspoon
Herbs(your favourite) 1 teaspoon  
Salt as needed

Directions:

  1. Boil potatoes in a medium sized vessel until soft and tender
  2. Melt the butter in a medium sized pan over medium heat
  3. Add the potatoes in the butter and then pour the herbs, minced dried garlic flakes, dried parsley and salt over potatoes, then toss to coat
  4. Turn off the stove, once the potatoes become slight brown
  5. Transfer it in to a bowl

Weekend Special Grilled Chicken





This yummy grilled chicken is super easy to make and perfect for weekend parties

How to make:

Ingredients:

  1. 10 Pieces of skinless Chicken thighs and legs
  2. 1.5 Table spoon Chilli powder
  3. 1 Teaspoon Turmeric powder
  4. 1/5 Cup plain yogurt
  5. 1 Table spoon Lemon juice
  6. Salt as needed


Directions:

  1. In a large bowl mix together chilli powder, turmeric powder, salt, lemon juice and plain yogurt
  2. Marinate the chicken pieces and keep aside for 30 min to1hr for better taste
  3. Preheat the Oven broiler
  4. Grease the baking pan
  5. Arrange the chicken pieces on the pan and broil up to 35 minutes (turning each side every 15-20 min)

SERVE THE CHICKEN WITH YOUR FAVOURITE SAUSE & ENJOY

Egg wrap Stuffed with Spinach and Rice



                  Egg wrap stuffed with Spinach and Rice


This is my favourite egg dish that I have ever had. I make this wrap in my busy days as it takes less time to prepare. These wraps are less effort to Prepare and best one for breakfast or side dish





How to make:

Ingredients:

2 Eggs
1 Cup Spinach finely chopped
1/2 Cup Red Onion finely chopped
3 Table spoon cooked Rice
1 Tea spoon Paprika
2 Table spoon cooking oil
1 Table spoon  Spring onion for garnishing
 Salt as needed

Directions:

For Stuffing:
  1. Heat the oil in a medium size non stick pan over medium heat
  2. Add Onion and and paprika 
  3. Cook the Onion until softened 
  4. Add the spinach and then rice after 2 minutes and stir well
  5. Once the spinach and rice mixed well, transfer in to a bowl and keep aside
For Egg wrap:
  1. In a medium size bowl, whisk the eggs and salt
  2. Spray 20 inch non stick pan with cooking spray
  3. Heat over medium high heat
  4. Pour the egg mixture to make a thin layer along the bottom of a pan like an Omelette
  5. Rotate the pan will allow the eggs to flow in to the empty spaces
  6. When the egg is cooked place the spinach rice mix in the centre of the omelette
  7. Roll the omelette like a wrap
  8. Transfer the wrap in to the plate
  9. Garnish the wrap with spring onions
